2 eggs
1 cup sugar
1/4 cup cocoa
1/3 cups corn oil
3/4 cups flour
1/8 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon vanilla
Preheat oven to 350 degrees.
*Note: Beat well after each ingredient is added.
Beat eggs and sugar, add oil,
beat again until blended. In a separate bowl sift cocoa, flour, salt,
and baking powder mix together and then add to the egg mixture, blend
well, add vanilla, beat again. Mixture should be very smooth. Pour
into a greased 2qt (9" x 9") baking dish.
Bake for 30-35 minutes, or until
a toothpick inserted in the center comes out clean.
Double this recipe for a 13" x 9" baking dish and bake longer (45-50 minutes).
Optional:
1 1/2 cups of chopped walnuts
