2 cups flour
½ teas salt
1½ cup sugar
1 teas baking soda
2 eggs beaten
½ cup shortening
1 teas vanilla/almond
1 teas lemon/almond
1 cup mashed bananas (=about 3)

½ cup sour milk (to sour, add 1 TB vinegar to milk, stir until thick)

Mix flour, baking soda and salt. Cream shortening, add sugar gradually creaming very fluffy. Beat in flavoring and eggs, add bananas, add flour alternately with sour milk, beat smooth after each addition. Grease pan. Bake 325 degrees about 60 minutes.

For Pumpkin Bread:

Replace bananas with canned pumpkin
1 teas of vanilla only (omit almond & lemon)
1 teas cinnamon
½ teas nutmeg
¼ teas allspice
¼ teas cloves

Icing:

2 cups confectionery sugar
4 tb butter
1 tb milk

Mix well, frost just the top when breads are still warm and the frosting will drip down the sides.
