(I usually double or even triple this recipe)

plum tomatoes, blanched then finely chopped
1/2 red onion, finely chopped
2 tablespoon capers (use salt packed – rinse and soak for 1
hr)
1/4 cup chopped fresh basil
3 cloves garlic
2 tablespoons balsamic or red wine vinegar
4 tablespoons olive oil
Salt and pepper

slices toasted Italian bread
Fresh mozzarella
Blanch
tomatoes 30 seconds in boiling water, then into ice water –
remove skin and seeds
Preheat
broiler. In a large bowl combine tomatoes, onion, capers, basil and
garlic. Stir in balsamic vinegar and olive oil. Season with salt and
pepper. Top toasted bread with sliced mozzarella then the mixture
and place on baking sheet. Broil until cheese melts. Serve hot.
